1/4 cup organic sugar2 tbsp. flour1/2 cup Earth Balance® Buttery Spread, melted1 can of pumpkin1 cup firm silken tofu1/4 cup Earth Balance® Organic Soy Milk (vanilla)1 tsp. vanilla1 tsp. cinnamon1/2 tsp. salt1/2 tsp. ground ginger1/2 tsp. allspice1/4 tsp. cloves2 tbsp. corn starch1 12 oz. package semi-sweet chocolate chips6 ounces of Sweet & Sara vegan marshmallowsDirections:Preheat oven to 375 degrees. In a medium bowl, mix graham cracker crumbs, organic sugar, flour, and melted Earth Balance® Buttery Spread. Press into an 8 by 8-inch square pan.In a food processor, mix pumpkin, tofu, Earth Balance® Soy Milk, corn starch, vanilla, cinnamon, salt, ginger, allspice, and cloves. Pour on top of crust. Bake 1 hour.Sprinkle chocolate chips on top of pumpkin mixture. Wait 3 minutes until chocolate begins to melt and spread evenly.Set oven to broil. Place marshmallows on top of chocolate and broil for 60 seconds until golden brown and toasty.Cut into squares and pig out!
